| Stir-fried Ostrich with Lemon, Ginger and Coriander - Serves 4

Ingredients:
- 2 Ostrich Steaks or a pack of Ostrich stir-fry
- 1 tsp garlic puree
- 1tsp ginger puree
- 1tbs soy sauce
- 1tsp brown sugar,
- 1tbs sesame oil
- 2oz (50g) each of: mange tout, corguette strips, carrot strips, red pepper strips.
- Bunch spring onions sliced
- 2tbs fresh chopped coriander
- 1tsp lemon juice.
Method:
- Combine the garlic, ginger, soy sauce and sugar to make a marinade.
- Mix in the Ostrich and leave to marinate for 20 mins. Heat the sesame oil in a wok, add the vegetables and Ostrich in its marinade.
- Stir-fry for 5 mins.
- Before serving, add the coriander and lemon juice.
- Serve on a bed of noodles.
