Stir-fried Ostrich with Lemon, Ginger and Coriander - Serves 4  


Ingredients:

  • 2 Ostrich Steaks or a pack of Ostrich stir-fry
  • 1 tsp garlic puree
  • 1tsp ginger puree
  • 1tbs soy sauce
  • 1tsp brown sugar,
  • 1tbs sesame oil
  • 2oz (50g) each of: mange tout, corguette strips, carrot strips, red pepper strips.
  • Bunch spring onions sliced
  • 2tbs fresh chopped coriander
  • 1tsp lemon juice.

Method:

  • Combine the garlic, ginger, soy sauce and sugar to make a marinade.
  • Mix in the Ostrich and leave to marinate for 20 mins. Heat the sesame oil in a wok, add the vegetables and Ostrich in its marinade.
  • Stir-fry for 5 mins.
  • Before serving, add the coriander and lemon juice.
  • Serve on a bed of noodles.
