Ostrich Bolognaise  


Ingredients :

  • 12oz (350 g) minced Ostrich steak
  • 1 tin chopped tomatoes in tomato juice
  • 1 small onion peeled and chopped
  • 2 cloves of garlic peeled and crushed
  • 2 bay leaves
  • 1 stick of celery chopped (optional)
  • 1 level tsp salt
  • ground black pepper
  • 1tbs tomato puree
  • 1/2tsp sugar,
  • 1/2tsp chilli powder.

Method :

  • Brown the mince in a stew pan, breaking up the meat with the back of a wooden spoon as it cooks.
  • Add the onion, garlic and celery, cook for 2 mins stirring well.
  • Add tomatoes, puree, bay leaves, salt, sugar, chilli powder and a few twists of ground black pepper.
  • Stir together, bring to the boil, reduce heat to low, cover and simmer for 1 hour.
  • Serve with hot pasta such a spaghetti, tagliatelli or rigatoni.
  • Remember to remove the bay leaves.
  • A crisp side salad goes well with this dish.
