| Ostrich Bolognaise

Ingredients :
- 12oz (350 g) minced Ostrich steak
- 1 tin chopped tomatoes in tomato juice
- 1 small onion peeled and chopped
- 2 cloves of garlic peeled and crushed
- 2 bay leaves
- 1 stick of celery chopped (optional)
- 1 level tsp salt
- ground black pepper
- 1tbs tomato puree
- 1/2tsp sugar,
- 1/2tsp chilli powder.
Method :
- Brown the mince in a stew pan, breaking up the meat with the back of a wooden spoon as it cooks.
- Add the onion, garlic and celery, cook for 2 mins stirring well.
- Add tomatoes, puree, bay leaves, salt, sugar, chilli powder and a few twists of ground black pepper.
- Stir together, bring to the boil, reduce heat to low, cover and simmer for 1 hour.
- Serve with hot pasta such a spaghetti, tagliatelli or rigatoni.
- Remember to remove the bay leaves.
- A crisp side salad goes well with this dish.
