| Roasted Ostrich Sausage Club Sandwich - Serves 2

Ingredients :
- 4 Ostrich sausages,
- 3 slices each of white and brown bread, shredded lettuce,
- sliced tomatoes,
- mayonnaise,
- tomato ketchup,
- wholegrain mustard.
Method:
- Roast the sausages at 180"C/350"F/Gas Mk4 for 20 mins until evenly browned.
- Drain and slice diagonally.
- Toast bread lightly and spread 4 slices with mayonnaise.
- Top this with lettuce, tomatoes and sausages.
- Mix a little tomato ketchup and mild grainy mustard into a little more mayonnaise and spread over the sausages.
- Top the remaining slices of bread.
- Cut into triangles and serve speared with a cocktail stick.
