Roasted Ostrich Sausage Club Sandwich - Serves 2  


Ingredients :

  • 4 Ostrich sausages,
  • 3 slices each of white and brown bread, shredded lettuce,
  • sliced tomatoes,
  • mayonnaise,
  • tomato ketchup,
  • wholegrain mustard.

Method:

  • Roast the sausages at 180"C/350"F/Gas Mk4 for 20 mins until evenly browned.
  • Drain and slice diagonally.
  • Toast bread lightly and spread 4 slices with mayonnaise.
  • Top this with lettuce, tomatoes and sausages.
  • Mix a little tomato ketchup and mild grainy mustard into a little more mayonnaise and spread over the sausages.
  • Top the remaining slices of bread.
  • Cut into triangles and serve speared with a cocktail stick.
