| Ostrich Burgers in Focaccia with Fiery Avocado Salsa - Serves 2

Ingredients:
- 2 Ostrich Burgers,
- 1 focaccia split and warmed.
- For the salsa:
- 1 avocado peeled and diced,
- 1tsp lemon juice,
- 1 tomato skinned and diced,
- 1tbs fresh chopped coriander,
- 1tsp chopped pickled ginger (optional)
- 1tsp fresh chopped chilli (or to taste)
- 1tbs finely diced red onion
Method:
- Grill burgers for 10-12 mins under a moderate grill.
- Mix all ingredients for the salsa and season with a pinch of salt and sugar.
- Place burgees inside focaccia, top with salsa and serve.
