Ostrich Gourmet Fillets andSteaks.
DO NOT OVERCOOK, having little or no fat they can easily dry
out. Best served rare to medium rare. Fry in a little oil, quickly
sealing the meat each side and then cook for 2 to 3 minutes
each side before serving. Alternatively wrap in tin foil with
a little butter (optional) and put in the oven for 15 to 20
minutes on a medium heat. Always leave the meat to rest on a
warm plate for a few minutes before serving.

Tip - Marinade with lemon juice, or balsamic vinegar, or
red wine, for 2 to 4 hours - then simply pan fry for 2 to 3
minutes each side in a drizzle of olive oil.

Roasts - Fan Fillet, Fillet or Steaks.
Place in oven proof dish and cover with tin foil. Cook on a
medium heat (best served medium rare for best results). Remove
and leave to rest before serving on warm plates.

Tip - Fan Fillet Roast, marinade as suggested for individual
portions but add a tablespoon of olive oil. Cover with tin foil
and place in a medium heat oven. Roast for approximately 1 hour
per kilo. (1 hour per kilo will be more than enough!).

Stir-Fried
Ostrich makes
a good healthy stir-fry since it has virtually no fat, it cooks
quicker and shrinks less during cooking.

tip - Cut
steak of fillet into strips, marinade in lemon juice or balsamic
vinegar for 2 of 4 hours. Stir-fry with your favourite ingredients,
but for about HALF THE TIME of beef or chicken.

Diced Steak
Use
your favourite beef or lamb recipe but since Ostrich Meat
cooks quicker and shrinks less during cooking, educe the amount
of Ostrich Meat in a beef recipe by 20% and shorten the cooking
time by 30% - 50%.

Tip - Diced
Steak ideal for casseroles and slow cookers. Try your favourite
lamb recipe for about 50% less cooking time. (You will
note there is no fat to remove from the dish).

Mince
Ideal for Shepherds Pie, Lasagne, Spaghetti Bolognese, Chilli
Con Carne etc. The delicate taste of the meat absorbs flavours
so much better than beef or lamb, making a tastier family meal,
lower in fat too!

Tip - Use any beef or lamb recipe, but reduce the cooking
time by around 50%

Sausages
COOK THOROUGHLY. Ideal for frying, grilling, roasting or
BBQ.

Tip - A low fat, high meat content sausage. Can be pan fried,
or slowly oven roasted. Grilled or BBQ use the lowest heat possible
so not to dry them out.

COOK THOROUGHLY. Ideal for frying, grilling & roasting
or BBQ.

Tip -
A low fat, high meat content burger. Roasting, place on a
baking tray in a pre-heated medium heat oven and cook for
approximately 10 minutes each side. Or for healthy grills
i.e. "George Foreman" they will take between 6 and
7 minutes. Grilling and BBQ, use lowest heat possible and
cook slowly (make sure they are cooked all the way through).
