Ostrich Roast – Fan Fillet

Delicious and nutritional the Ostrich Fan Fillet is the largest Fillet on the bird, 1 kg, 1.2 kg and 1.5 kg.

Place in an oven proof dish and cook on a medium heat. Roast for approx 1 hour per kg. Best served rare to medium rare due to the low fat content of the meat. Remove from the oven and leave to rest before serving.

Oslinc Tip: Marinade with lemon juice, or balsamic vinegar or red wine for 2 to 4 hours before cooking.
