Kangaroo Stir-fry with Lemon, Ginger and Coriander

SERVES TWO 

1 Pack of Oslinc Kangaroo Stir fry

1 tsp garlic puree

1 tbsp soy sauce

1 tbsp sesame oil

1 tsp ginger puree

1 tbsp brown sugar

1 tsp lemon juice

2oz (50g) each of: mange tout, courgette strips, carrot strips, red pepper strips

Bunch of spring onions sliced

2 tbsp freshly chopped coriander

 

 Combine the garlic, ginger, soy sauce and sugar to make a marinade.

 Mix in the Kangaroo stir-fry and leave to marinate for 20 minutes

 Heat the sesame oil in a wok; add the vegetables and Kangaroo with marinade

 Stir-fry for approximately 5 minutes, being careful not to overcook the Kangaroo as it is best served medium rare.

Before serving, add the coriander and lemon juice

Serve on a bed of noodles
